Note: This dish is delicious with any of the meals in the Salvi Kitchen menu, but especially with your pupusas. If you want to make your curtido spicy, add jalapeno and or chili flakes at step 1.
INGREDIENTS
½ head large cabbage or 1 small cabbage, sliced thinly
1 small carrot, sliced thinly
½ large or 1 small onion, sliced thinly
2 tsp kosher salt
¼ cup apple cider vinegar
¼ cup white vinegar
1 ¼ cup water
½ tsp dried oregano leaves
1 dried bay leaf
INSTRUCTIONS
In a large mason jar place the bay leaf, cabbage, carrots, and onion.
Bring the salt, vinegar, and water to a boil, then remove from heat and pour over the cabbage. Cover the pickle with a plate to weigh it down or with plastic wrap.
After an hour, mix it up and add the oregano, taste the pickle, and if you want it saltier add a little more salt. It's ready to eat.
